INGREDIENTS
- 5kg ripe tomatoes
- 5 tablespoons virgin olive oil
PROCEDURE
- Rinse tomatoes properly.
- Remove stems, and cut into smaller size.
- Blend until the tomatoes have all reduced into a sauce.
- Strain out the skin and seeds of the tomatoes over a pot.
- Heat the sauce over low heat until simmering, stirring every once in a while and checking on the consistency.
- Add olive oil once you’ve achieved the desired consistency and stir.
- Your tomato paste is ready to be used in recipes, or ready to be stored.
